NOMA has made Nordic cuisine world-famous, but this type of

Denmark, although in a slightly less doctrinaire fashion.
But it's wonderful in whatever form it
takes. In this book the reader is invited inside 16 of the very
best Danish restaurants, which represent gastronomy at the highest
level. The main focus of the food is Nordic - which means that it
either originates from the northern climes or is strongly
associated with the geographic territory and is deeply rooted in
the use of local ingredients. Each restaurant is introduced with a
text about the food, the setting, and the chef. Three recipes and a
wealth of atmospheric pictures are also included for each. This is
