THE AUTHOR
Adam Aamann-Christensen is owner of the Copenhagen lunch
restaurant Aamann's, which has become highly appreciated by
customers and well-reputed among food critics both nationally and
internationally. In 2007, he was awarded an honorary prize by the
Danish Gastronomic Academy for his outstanding effort to reinvent
the traditional Danish open-faced sandwich
(smørrebrød), and - in his own words - "bring it back
